  3. Incorporate the water and salt, mix.
  4. Bring to a boil, and cook until couscous is tender.
  5. Remove excess cooking liquid, and reserve.
  6. Make the dressing by mixing olive oil, Dijon mustard, lemon zest, lemon juice, paprika, and salt.
  7. In a bowl, mix couscous and the dressing. Stir very well.
  8. Refrigerate for 10 minutes.
  9. Incorporate arugula, cucumber, tomatoes, feta, and mint.
