Sesame oil is an edible vegetable oil which is extracted from sesame seeds. It is used as cooking oil as well as flavor enhancer because of its nutty aroma and taste. Color of oil helps to distinguish between roasted and non-roasted sesame seed oil. Light-colored oil is of non-roasted sesame seeds while dark-colored oil comes from roasted sesame seeds.

Light colored sesame oil is the pure oil which is extracted from uncooked sesame seeds. It comes in both refined and unrefined form. Unrefined oil is used in salads and marinades, while refined sesame oil is used in cooking meat and vegetables. Dark colored sesame oil is pressed from toasted seeds and has intense sesame flavor due to which it is used as condiment and flavoring in food.

Sesame oil is called Queen of oils. It has a vast effect on the health of individuals. Sesame oil is enriched with vitamins and minerals. It contains manganese, copper, magnesium, phosphorus, zinc, selenium, vitamin E and vitamin B1. It is well known for its antioxidant activity.
