6 Delicious Vegan Meals That You Will Fall In Love With

Veganism is on the rise in America. As veganism becomes more popular, many people are wondering what vegan meals they can eat that will fall in love with them. Vegans typically avoid all foods of animal origin so it can be difficult to find vegan dishes that are tasty and satisfying. Luckily, there are some delicious vegan meals that you’ll fall in love with!

1. Vegan Mexican Food

Mexican food is already filled with spicy vegetables so if you don’t include meat, you may not even notice the difference. There are tons of recipes for delicious vegan burritos that are worth giving a chance to. Mexican food is perfect for vegans because they’re usually healthy and most importantly, delicious.

You can use beans and enchilada sauce in every Mexican meal and you will love the outcome. If your family is not vegan, they may enjoy this new twist on Mexican food and it can be a great way to introduce them to vegan cuisine.

2. Vegan Sandwiches

A very easy meal to prepare is vegan sandwiches. Vegan meals are dishes that do not contain any animal product, for example, milk or eggs. However, these things do not need to be included in sandwiches at all.

This is a very common recipe among vegans in vegan sandwiches because they can be made in numerous ways with different ingredients without sacrificing flavor or taste. For example, if one does not have time to prepare lunch then grabbing some bread slices, mayonnaise (non-dairy), lettuce leaves, and tomatoes will yield delicious results within minutes!

Here are some ideas for vegan sandwiches:

  • Bread slices with vegan mayonnaise and lettuce
  • Peanut butter on bread slices (with jam)
  • A toasted bagel with hummus spread over the top
  • Baked potatoes (cut them lengthwise or in half, depending on preference), scooped of their flesh, and mixed together. Add some rice milk for creaminess along with vegan cheese for that cheesy flavor
  • A fruit salad placed between two slices of bread

3. Tofu Scramble

A tofu scramble is an amazing vegan meal that is healthy and delicious. It is very easy to make too! This vegan breakfast usually consists of tofu cubes with spices including turmeric, coriander powder, curry powder, or even nutritional yeast for a cheesy flavor.

To make it vegan, you can replace the eggs in a tofu scramble with a vegan egg substitute. Simply combine vegan egg substitute with water and whisk until you have a cooked texture. Let it sit for about two minutes before adding the tofu cubes to the mixture. Fry this up just like an omelet!

4. Sweet Potatoes With Seasoning

Vegans love putting sweet potatoes in vegan meals. The sweet potatoes taste delicious when seasoned with vegan-friendly spices like paprika, garlic powder, onion salt, and other tasty mixes. This vegan meal is easy to make because you can put it together quickly while your oven heats up for the main course.

Get creative with the mixes you use for vegan meals. There are vegan-friendly seasonings out there that you may not have considered before, like cumin or nutmeg. Make sure to read the ingredients carefully if you want vegan meal options because some mixes contain dairy products and other animal byproducts.

5. Roasted Vegetable And Lentil Soup

This is a little bit more complicated dish, but it’s definitely worth the time. This vegan soup has a delicious roasted taste with hints of lemon and cumin, which goes great on top of some warm vegan bread or chunky crackers. It is best to roast your veggies before adding them to the pot so they will be nice and caramelized and full of flavor.

The preparation may look intimidating at first but it comes together quickly if you chop everything into small pieces that are roughly uniform in size. Just like with any other vegetable soup! Give this one a try for yourself as soon as possible because you won’t regret it!

6. Vegan Lasagna

Who says vegans cannot enjoy Italian food? There’s a great recipe for vegan lasagna that you can make at home. It’s delicious and will help your family get their daily intake of vegetables, which is always a win!

What you will need is one large onion (chopped), two cloves of garlic (minced), sixteen ounces of firm tofu (drained and crumbled) as well as three cups of marinara sauce or pasta sauce (homemade or store-bought, divided into thirds).

Season it with some salt and pepper to taste, oregano (two teaspoons), basil leaves or parsley flakes (one teaspoon each) as well as some crushed red pepper.

Vegans may not eat animal products, but they can still enjoy some delicious meals. Vegan Mexican food is a great start, and you can always make tons of different sandwiches that are tailored to your taste. Use tofu to make a scramble instead of eggs and bake some sweet potatoes that you’ll season creatively. You can also make some more complicated meals such as lentil soup filled with delicious grilled veggies or a vegan lasagna with marinara sauce. The choice is yours and you’ll never run out of ideas!
