New form of gobi?

Costco sells bags of diced gobi. Riced Cauliflower it says, so I could boil it for 5 minutes and use it like rice.
But this has potential to create something new. Or have any of you seen a recipe for gobi that starts “Dice a head of cauliflower into bits”?

  1. I haven’t seen any receipies like that but just running my cook brain I can think of making low carb patties like instead of using mashed potatoes to make the patty use this or a mix of potatoes and riced Gobi.

  2. The dish would turn out very different. You’d probably have to adjust the amount of liquid and spice. It’ll turn out more like daal.

  3. I just did a Chef’s Plate cauliflower fritter with cheese. I don’t know the proportions exactly, but rounding up to a whole cauliflower, it’s something like:

    1 whole cooked and mashed cauliflower or equivalent riced cauliflower

    2 -3 whole eggs

    1/2 – 3/4 cup chickpea flower

    1/2 – 3/4 cup grated mozzarella cheese

    Generous grinding of salt and pepper

    Sauté flattened mixture in oil until well browned both sides. Serve with sour cream mixed with horseradish. It was very tasty.
