recommendations for good Indian cookbooks?

Hello, I am looking for a good cookbook of Indian recipes. The one I have now is simple but the food tastes…off. I think it might be the amounts of spices aren’t enough. Anyways, anyone have recommendations for a good, authentic cookbook.

    1. Second madhur jaffrey. I have two of her books one is a quick and easy Indian recipe book which cuts a lot of corners but for having dinner on the table in an hour its great, esp when you’re not cooking Indian every night. The other I think is called “curries to kebabs” and I thinks its great. No pictures and not specifically Indian but does give excellent insight into the evolution and influence of Indian food.

      I also have Vij’s cookbook which is a fine dinning Indian. Vij’s has been considered one of the best Indian restaurants in North America. I find the recipes can be a bit involved definitely the kind of meal you at least need to plan a day ahead for.

    1. Good recommendation. I’ve been following his website/blog for a couple of years and making the curry base. Generally, I’d do the larger batch and freeze it.

      1. Me too, it’s quite easy to whip up a nice curry after work with the base already made.
        And throw it all in a pressure cooker with meat and then reduce it a bit in a pan and you’re good to go.

    1. That’s quite a find! I like how they kick things off with six different beef curries, followed by snipe, pigeon, tripe, and veal …

      1. I like the curry powder recipe. 1 eggspoon of cumin seed, and don’t forget the ‘good’ rice!

        In England.

        1 lb. Coriander Seed.
        ½ oz. Saffron.
        1 Eggspoon Cumin Seed.
        ½ doz. Pepper Corns.
        Small bit of Cinnamon (1 in. square).
        8 Dried Chillies Capsicums.
        4 Tablespoons good Rice.

        In Ceylon.

        Saffron and Cumin Seed.
        Pepper Corns. Cinnamon.
        Dried Chillies—Rice.
        Curry Leaves, and few other things of which cannot be procured in England.

  1. Of course, it all depends on what type of Indian food you enjoy cooking….. What book do you currently have?

    Easy ones to follow – anything by Madhur Jaffrey. Huge book of vegetarian recipes – Lord Kirshna’s Kitchen.

    There are lots of books with titles like “300 Regional Indian Dishes” or “500 Indian Curries” and they are also reasonable books to begin cooking Indian food.

    There are also books that focus on regions of India – Kerala Food, Upadi Food, Tamil Food, …. They are good to get ideas of the differences between the different regions of India. There are even books on British Indian food.

    If you *really* want to get traditional and authentic, get Meenakshi Ammal’s *Cook and See* books. These are South Indian Tamil food, and quite extraordinary, although you need some knowledge about Indian food and techniques to decipher parts of them.

  2. Tried YouTube? Vahchef (my favourite) Harpal Sokhi, Cooking with Asifa, Hari Gotra.

    Any of the Hare Krishna cookbooks if you are vegetarian. And any Balti cookbook if you like balti curries

    Step two : make friends with his/her mom

    Step three : write down what she tells you when you ask how to cook

    1. This is exactly how I learned. I grew up in an area just west of London with a big Indian population. My best friend when I was 5 was a Gujarati guy whose mum loved inviting people over to dinner. Well, that Gujurati guy just wouldn’t leave me alone and 20 something years later was an usher (groomsman) at my wedding. In the intervening 20 years I had almost weekly cookery “classes from his mum. I’m a pretty good Indian cook, now. They are just the best family.

    2. I am friends with a woman of Indian descent. Her mom has passed and she doesn’t cook. She and her husband are coming over for Indian food soon. I used cookbooks and the interwebs.

  4. I bought The Indian Cookery Course by Monisha Bharadwaj and I really like it. It has many recipes in all categories and also more general topics like ingredients, regions and the basic styles of dishes.

  5. Im a big fan of YouTube channels for new Indian recipes, which I like because I can ‘see’ the putting together and the process of making the dishes.

    Also, get curried, and manjulas kitchen.

    Not sure but you may find some old madhur Jaffrey cooking shows too (famous indian cook book person)
